A simple, easy and delicious recipe to please everyone in the family. These maltese cupcakes have been something I have made quite few times, just when I get a sweet craving and have nothing else in the house. Cupcakes are so easy yet so fun to make, and such a nice thing to have in the kitchen for anyone to nibble. This recipe isn’t over complicated, using just basic ingredients to create a pretty standard and yummy result. I always follow the recipe from this book that I bought quite  a few years ago now, but there are lots of ways to mix it up to make them much more personal to you. I seem to have re-discovered my love of baking recently, so am so excited to carry on sharing latest recipes that I have tested or even created. 
Maltester Cupcakes

Ingredients

250g Plain Flour // 2tsp Baking Powder // 100g Soft Brown Sugar // 250ml milk // 120ml sunflower oil // 1 egg // 24 Maltesers 

Begin by pre heating the oven to 200 degrees (180 fan). Place 12 cupcake cases into a cupcake tin ready to be baked. 
In a bowl, mix the sugar, plain flour and baking powder together and make a well in the middle. In a jug, mix together the milk, oil and the egg. Whisk until thoroughly combined. Pour this into the well of the dry ingredients and fold everything together. The mixture should be thick and creamy. 
Add half the mixture to the cupcake cases, then put two maltesers in the middle of each cake. Top the cupcakes with the remaining half of the mixture. 
Bake for 20 minutes, until golden brown and cooked through. Set aside to cool on a wire cooling rack. 

If you want to make the recipe more interesting, you could top each cupcake with a simple buttercream and decorate with crushed maltesers! However, they are just as good plain if you can’t be bothered to set yourself another task!
