A quick and easy recipe post today, one that I actually have had on pause for a few weeks. Recently I seem to have been working later and wanting to go to the gym in the evenings, so I have been trying to eat food that is quick and can be made really easily. This recipe in particular is also great because it isn’t too rich nor filling, and is great as leftovers for the next day. I absolutely love Moroccan inspired dishes, with all the peppers and onions – so full of flavour and different to many other dishes. I always choose to have cous cous everytime with dishes like these because it is so fast to make and is delicious. The contrast between the sweet and tangy skewers goes perfectly with the lemony and herby taste of the cous cous. It is a dish that pleases all, and can be adapted to suit everyones taste buds and needs. The recipe for this is simple and straightforward, a great starting point for getting back into blogging. 
Just to mention that quickly, I have been extremely neglecting my blog and all that comes with it in the past few weeks. I have had a few personal things going on and just haven’t really found the motivation to keep going. Sometimes I think you just need to take a break from things to figure out what needs to change and whether the things you wanted say a year ago are still the same. I can say now that I am ready to start everything up again and so excited to get this blog going again! Anyways… back to the recipe!
Sweet Chilli Chicken Skewers with Lemon Cous Cous

Ingredients

2 Chicken Breasts // 1 Red Pepper // 1 Red Onion // 2tbsp Sweet Chilli Sauce // 1tbsp Honey // Salt & Pepper // 2 Cups Cous Cous // 1 Lemon // Handful Coriander

Start by preparing the ingredients, and preheat your oven to 200 degrees (180 fan). These skewers can also be grilled or barbecued depending on what you prefer. Dice the chicken, pepper and red onion ready to be used on the skewers. Finely chop the coriander and get the juice from the lemons. 
In a bowl, mix together with a fork or whisk the sweet chilli sauce, honey, a little olive oil and seasoning. Make sure it is mixed so that it doesn’t split. On some skewers, evenly distribute the chicken, peppers and onions between six. On a baking tray, cover with foil and evenly spread out the skewer sticks. Drizzle over the sweet chilli sauce over the skewers. 
In another bowl, add the cous cous. Drizzle over some olive oil, the lemon juice, coriander and seasoning. Mix together thoroughly with a fork. Pour over boiling water until the cous cous is covered. Cover the bowl with cling film and set aside. Put the skewers in the oven and set the time for 15 minutes. Remover from the oven when the chicken has a good brown colour. 
When the skewers are done, mix the cous cous with a fork and serve in some pasta bowls. Top with the chicken and pour over some excess sauce from the baking tray.
