Today I have a recipe for you guys that I have just been obsessed with lately. I love this as a brunch meal, however have been known to make it for dinner when I want something quick and relatively healthy. I used to make the breakfast muffins with ham and cheese a few years ago, so decided to develop the recipe a little more. I adore the muffins with baked eggs – it is so filling and so delicious. Smoked salmon and eggs has always been a classic combination, so there was no way it wouldn’t work. I served the muffins with crushed avocados topped with fresh chillies and a squeeze of lime. Simple, delicious and very appealing on the eye. I think the best part of this recipe had to be plating everything up, making it look beautiful and appetising. If you want to impress house guests, treat your friends to brunch or cook yourself something wonderful, give these a go! 
Smoked Salmon Muffins
Ingredients: 

120g smoked salmon // 6 slices white bread // 6 eggs // 50g butter // salt & pepper // 1 avocado // 1 red chilli // 1 lime
Start by pre-heating the oven to 200 degrees (180 fan). I then grease a muffin baking tray with butter, just six cups. In the microwave, melt the butter in a heatproof bowl. 

On a board, lay out the six slices of bread and flatten them using a rolling pin. Not too much, just to about half the width as before. Evenly spread the melted butter over all the bread slices, using a pastry brush. I then put the slices into the cake tray, pressing the corners into the edges. It won’t be perfectly even, but that is definitely part of the charm with these. I then place smoked salmon over the bread slices… don’t add too much as it will over power all of them. 
In a bowl, place all the eggs into it and add a yolk into each muffin case. Then add a little bit of the egg whites to each muffin ready to be baked. I don’t use a whole egg as there is always way too much in each. Top with salt and pepper, then place the muffins in the oven for about 10-15 minutes. The eggs should be completely white and the bread should be crispy. 
Crush the avocado and place on your chosen plate, then top with chopped chillies, salt and pepper and some lime.
