This is such an easy recipe, and is loved by everyone in my food loving family! Originally I made a pavlova, which is somehow the neater version of this, but I loved making it so much that I decided to try making eton mess. Ever since, it has been a favourite choice all year and not just the summer! As I had to make this in a kitchen i’m not used to, I bought the meringues as opposed to making them from scratch, but soon I will post about how to make the perfect meringues! They’re one of my favourite things to make.
Ingredients (serves 3-4):
300ml Double Cream // 5 Meringue Nests // Strawberries and Raspberries
Pour all the cream into a mixing bowl and whisk until a thick, creamy liquid has formed. I had to use a hand whisk – luckily I have quite strong arms – but usually I would use an electric whisk or mixer just because it’s quicker!
Add the berries.
Crush the meringues into the mixing bowl.
Mix all ingredients together, squashing the berries and meringue as done so. This creates the colour, and a light and smooth texture.
