The weather here in Bristol has been so depressing over the past few days, raining and dull, and so the only way to cheer myself up was to do a little cooking – especially when cooking something that is totally delicious and comforting. Chilli is the first meal I ever learnt to cook, and for some unknown reason has always been my favourite food to make and eat. Here is my simple recipe that has developed over a few years. Personally, I feel that a Chilli isn’t the same without all the extras including rice, nachos and sour cream with chives. On Wednesday we celebrated my aunties 40th birthday – so the blog has been slightly neglected. Sorry! 
Chilli Con Carne
Ingredients (6 people): 

500g Extra Lean Beef Mince (roughly chopped)  // 2 Onions (roughly chopped) // 3 Garlic Gloves (finely chopped) // 1 Red Pepper, 1 Yellow Pepper (chopped length ways)// Cannelloni Beans, Baked Beans, Kidney Beans in Chilli Sauce (all drained and rinsed with cold water) // 1 Chilli (finely chopped) // 2 Tinned Tomatoes // 1 tbsp Tomato Puree // Bay Leaves // 3 Cinnamon Sticks // 2tbsp Chives (finely copped) 


Rice // Sour Cream // Chives // Nachos
Prepare all the ingredients ready to be put in the pan. 
Preheat the oven to 160 degrees. Heat up olive oil and butter in a pan until hot. Add the garlic and onions and cook until golden brown. Add the mince and stir until browned all over. Then, add the peppers, cinnamon sticks, bay leaves and chilli. Stir until the ingredients come together. Once the peppers feel soft, add the remaining ingredients in the following order: beans, tinned tomatoes, tomato puree and 1/4 pint water. Stir and simmer for 10 minutes. 
Once the ingredients are bubbling, transfer to an oven proof dish with a lid. Cover and put in the oven for 45 minutes to 1 hour. 
The chilli is best eaten a few hours after being cooked so that all the flavours come together.
