Last week I had a few days off because I feeling so drained from everything, and by the third day I was starting to get really tired of just lying around, even though essentially that did make me better! Anyway, I decided to make some pasta for lunch and then I could have the left overs seeing as I was home. I haven’t posted a recipe for a while, so I finally found some time to do one. Originally I started this blog so that I could share all my cooking ideas, however I never anticipated that these posts would take so long! I hope you enjoy.
Pasta with Mozzarella and Bacon
Pasta // 1 Tin Chopped Tomatoes // Handful Basil finely chopped // Half Mozzarella Ball roughly chopped // Olive Oil // Chilli Flakes // 3 rashers Bacon
Firstly prepare all of the ingredients ready to cook. This recipe can be a little more complex than i’d thought… but remember cooking is all about what your natural instinct tells you, so you shouldn’t be following word for word as everyones taste buds are different. Boil the water for the pasta and add salt. Once boiled add the pasta.
Whilst the pasta is boiling, put the chopped tomatoes into a pan adding the olive oil, chilli flakes and basil. Season, bring to the boil and simmer. This should form a good sauce consistency and should be packed with flavour. If needed add a little water so the concentration of the tomatoes isn’t too high.
Whilst the sauce is simmering, pan fry the bacon to your taste. Once the bacon is cooked, dry it on some kitchen paper to get rid off the grease, and chop up roughly to put in the sauce.
Add the sauce tot he pan that you cooked the bacon in and add the bacon again. The reason for this to get all the flavour from the bacon pan into the sauce.
Drain the pasta and put back in the empty saucepan. Add the sauce and 3/4 of the mozzarella. Keep stirring on a low heat until the mozzarella has melted. This should form a slight glaze on the pasta.
Serve with some raw mozzarella on top to mix up the look and taste of the dish. Enjoy.
