Happy Sunday everyone! Today i’ve got an amazing recipe for you, but unlike my normal recipes I haven’t photographed the process because to be honest I forgot and so I thought I would just get some pretty pictures of the final result. This is a red velvet torte. It was meant to be a red velvet cake, however I added too much flour so it turned into more of a rich delicious torte which is fine!
Red Velvet Torte
150g butter // 150g caster sugar // 1 tsp vanilla extract // 3 eggs // 4 tbsp greek yoghurt // 3 drops red food colouring // 150g self-raising flour // 50g cocoa powder // 1tbsp semi-skimmed milk
Icing: 100g butter // 200g cream cheese // 500g icing sugar // 1 tsp lemon juice
Pre-heat the oven to 180 degrees (160 fan). Grease a 15cm cake tin.
Beat the butter, sugar and vanilla together in a bowl, and then add the eggs one at a time. In a separate bowl mix the yoghurt with the food colouring. It should look very very red! Add the yogurt to the cake mixture. Fold in the flour and cocoa powder, followed by the milk. Spoon into the cake tin. Bake the cake well for about 45 minutes, until a skewer runs clear. Remove from the oven and leave to cool thoroughly.
To make the icing, mix the butter and cream cheese together in a bowl using an electric whisk. Beat in the icing sugar a little at a time. Once done, add the lemon juice and beat for a further five minutes until pale and very fluffy. Cover the cake evenly with the icing and serve.
