I have decided to start a new series on the blog – some simple quick and easy recipes for lunch time. When I am at home in the day, I often forget that I have the ability to make myself some delicious and mouthwatering food. In the evening I always experiment with cooking and making different dished, and have recently thought why don’t I do the same for lunch? I often find myself grabbing a panini from Starbucks, or a wrap from McDonalds, which quite honestly is just a waste of money. As it is now summer, I have time in the day to make myself some good healthy food for lunch. I know this isn’t the case for everyone, so I thought I would create a load of recipes to share on the blog for lunch time inspiration. Some of these will be ones that you kind of need to be at home for, and others will be ‘make the night before and chuck in a lock and lock’.
Todays recipe is a simple panini, with my one of my favourite fillings. As well as a super healthy, delicious smoothie to accompany it. I currently work in a coffee shop, where we make a lot of food to order. This includes panini’s, soups, quiches and sandwiches. I have learnt a lot of combinations when I have been there, and have really started to enjoy more foods, simply by toasting them in a baguette. My newest favourite is goats cheese. Being completely honest, I was a little afraid of goats cheese until I tried it. I have no idea why, it was just a psychological thing, that I couldn’t overcome. One lunch time I pushed myself to try it, and instantly fell in love. The strong tangy texture with a sweet tomato had me hooked, and I have been eating so much of it since. I have also heard that it is a lot better for you than normal cheese, this has encouraged me to eat it even more. Costa coffee do an amazing goats cheese panini, with a sweet chilli chutney and seeded panini bread. It is divine. This then made me start to replicate the recipe at home, which was now a possibility, as I forced my grandparents to have a panini grill in the house! Honestly, they are so worth the money. To accompany my panini, I love a good green smoothie. I started drinking these when I joined the David Lloyd, as they sell them in the cafe. Instead of paying a lot of money every time I want one, I just blend the ingredients at home. This smoothie is so ridiculously healthy for you, yet tastes so sweet and yummy!
Goats Cheese Panini
Good quality baguette roll // goats cheese // sun-dried tomato pesto // fresh tomatoes
Turn your panini grill on, ready to use.
Cut a baguette in half, as shown in the photo below.
Add your fillings to the baguette. My order is pesto, tomato, goats cheese; however you can do it in whatever order you choose.
Grill your panini for about 3-4 minutes. The goats cheese should be soft, and panini warmed through.
I like to serve mine with a salad, consisting of baby leaves, cucumber, avocado and dressing!
Super Green Smoothie
Ingredients (one smoothie)
1 celery stick
1tbsp chia seeds
1/3 lemon juice
1/2 red apple, chopped finely with skin on
Blend all your ingredients together until you have a smooth delicious smoothie!
