As you may have seen on my social media recently, I have moved into a flat where I have complete freedom over everything.. the most important to me being the kitchen. It has given me a new leap of motivation in terms of cooking and baking, so I have taken the opportunity to seize this and bring some new and delicious recipes to the blog. For the past few weeks I have really been embracing the Autumn rituals, so have been experimenting with different flavours in lots of different ways. The freedom of the kitchen means that I have been able to get as messy and creative as I want, as well as being able to get photos that I have wanted for so long. The first recipe I want to share today is something that was going round and round in my head for days, that I have completely made up just using a basic sponge cake recipe that I learnt when I was nine. To me, the flavour and scent of orange really signifies Autumn and Christmas, so I wanted to incorporate this into a cake. Seeing as it is Autumn, everything at the moment also seems to be all ‘sugar, spice and everything nice’. And so, I give you, the Spiced Orange Loaf. I basically just chucked a load of spices together with some oranges and sponge and this is what I created. I love making loaf cakes as they always look so good, don’t have to be iced if you can’t be bothered and are great as a small snack with a cup of tea. I am not joking, this loaf got devoured within a matter of hours. By hours I think I would say about 2? Luckily… I only had 2 slices 😉
So here you go – get into the Autumn spirit with my Spiced Orange Loaf cake.
Spiced Orange Loaf Cake
Prep Time – 15 minutes
Cooking Time – 35-40 minutes

3 eggs // 200g butter // 175g caster sugar // 175g plain flour // 1.5 tsp baking powder // 2tsp orange extract // grated zest of 2 oranges // fresh juice of 1 orange // 1tsp ground ginger // 1tsp ground cinnamon // 1 tsp ground all spice // 1tsp ground nutmeg
Loaf Tin (23x13cm)
Pre-heat the oven to 200 degrees (180 fan). Line you loaf tin with greaseproof paper and grease with a little butter.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs, orange extract, grated zest and fresh orange juice. Mix until combined.
Then, sieve into the mixture the flour, baking powder and all four spices. Fold all the dry ingredients in until the cake batter is smooth and creamy. Empty into the loaf tin and cook.
I would check the loaf after 30 minutes. Put a skewer or cake tester through the middle. If it comes out clean it is ready, if not put back for a little longer. Keep it in the oven until the skewer is clean and it has a beautiful golden top. Leave to cool for a few minutes.
Let the loaf out of the tin and place on a beautiful board. Top with a sprinkling of icing sugar and serve with some lovely winter drinks.
* For an added festive punch, when you have removed the loaf from the oven, create some small holes on the top. Empty 1tbsp of Cointreau liqueur into a small bowl, and use a pastry brush to brush it onto the top of the loaf to create a boozy drizzle.
